Food hygiene or safety is the study which describes preparation, handling and its storage in a way so as to avoid any microbial growth causing serious illness. The link between a hazard and its potential exposure defines what we term as risk. Toxicological risk assessment (TRA) is a research based evaluation which generally comprises 4 activities namely – hazard identification and data evaluation, exposure assessment, dose response and risk trademarks. Both in-vitro and in-vivo methods are most commonly used by industries and regulatory authority for toxicity testing. An in-vitro test is the study of the procedures that is performed outside a living organism. In contrast, an in-vivo tests study is performed on living organisms. Track 19: Cancer and Chemical Carcinogens

Chemical exposure has been related to the development of various types of cancer. It is possible that nearly all the chemicals undergoing metabolism while following their respective enzymatic pathways, develop differences in their kinetics and saturation levels. Few of these metabolic process lead to activation of electrophiles while many leading to its inactivation, thus exposure to any chemicals initiates competing metabolic pathways which may lead to certain mutation sometimes resulting to cancer.
